PEARL Matcha Collagen & Dark Chocolate Truffles



A super-nourishing, antioxidant and collagen rich decadent snack created by the Fluidform Pilates Nutritionist using PEARL Marine Collagen Superpowder (Japanese Matcha).

These Matcha & Dark Chocolate Truffles are dairy free, gluten free and refined sugar free, so you can enjoy knowing you are providing your body with an abundance of nutrients.  

INGREDIENTS: 

1 cup raw cashews 
3 cups shredded coconut
1 tbsp raw honey or maple syrup
1/4 tsp vanilla bean paste
Pinch of sea salt
4 tsp PEARL Marine Collagen Superpowder (Japanese Matcha)
200g dark chocolate (70% cacao or more)


SERVINGS

PREP TIME I 10 minutes
COOKING TIME I 30 minutes


METHOD:

  1. Add cashews and shredded coconut to a food processor or high speed blender. Blitz until combined. Add matcha, honey, vanilla and salt and blend until firm and sticky.

  2. Roll mixture into 10 balls and refrigerate for 30 minutes.

  3. Melt chocolate in a double boiler until smooth. Dip the balls into chocolate and transfer to a plate lined with baking paper.

  4. Sprinkle with sea salt flakes. Chill until firm. Enjoy! 

 

NOTES:

Matcha truffles will last in and airtight container in the fridge for up to 7 days.
Freeze for up to 3 months.
